Giolitti was founded in 1890 as a dairy in the Monti district at the Grillo salita, an area then booming. Thanks to the dedication of Giuseppe and Bernardina Giolitti, the small store grew rapidly, becoming a point of reference for Romans looking for high-quality milk and dairy products. Thanks to the quality of its products, it soon became the dairy of the Royal Household.
A few years later, other “Giolitti” establishments were opened, including the now historic location on Via Uffici del Vicario, where one of the sons, Nazzareno, together with his wife Giuseppina, added a vegetarian restaurant to the milk sale and began the business of ice cream and homemade desserts.

During the 20th century, Giolitti became an institution, frequented by celebrities, politicians and tourists fascinated by its unique atmosphere and its products with their unmistakable flavour. Nazzareno’s son, Silvano, devoted particular care to the ice cream, personally creating the recipes, which his three children and wife still jealously guard today.
